Walk through any supermarket today and you will notice a remarkable shift. More consumers are turning packages around to read ingredient lists before making a purchase. They are no longer asking only, "How does it taste?" They are asking, "What is actually inside?"
This growing awareness is driving one of the biggest transformations in the food industry—the rise of **clean label foods**.
My Journey Towards Simplicity
When I began developing healthy snacks using real ingredients in their natural form, I received plenty of advice.
Many people asked,
*"Why would customers buy these products when they can purchase sweets from local mithai shops at nearly the same price?"*
It was a fair business question.
But I viewed food differently.
I wanted to create products that celebrated the natural taste, aroma and nutritional value of ingredients rather than masking them with artificial colours, synthetic flavours, stabilisers and unnecessary chemical additives.
Ironically, many people questioning this approach were themselves dealing with lifestyle disorders such as diabetes, hypertension or high cholesterol. It highlighted an important reality: our food choices often do not reflect our understanding of health.
The Cost of Highly Processed Food
Modern food processing has undoubtedly improved food safety and availability. However, excessive processing often introduces ingredients that our grandparents never encountered:

* Synthetic flavour enhancers
* Chemical preservatives
* Refined sugars
* Stabilising agents
* Highly refined starches and oils
These ingredients help products look attractive, remain stable during transportation and achieve longer shelf life.

A Conversation That Stayed With Me
During my twelve years in Singapore, I had the opportunity to interact with researchers, healthcare professionals and scientists from different disciplines.
One discussion with a heart surgeon particularly stayed with me. We spoke about how changing food habits, increased consumption of highly processed foods and sugary beverages were becoming growing public health concerns across many countries.
What impressed me equally was Singapore's commitment to public hygiene and clean drinking water. Safe drinking water was available from virtually every public tap and household, reflecting the importance of preventive public health infrastructure.
That experience reinforced an important lesson: public health depends not only on hospitals and medicines but also on everyday food choices.

Yet their ingredient lists often tell a different story.
This practice, commonly known as **greenwashing**, creates an appearance of sustainability or healthfulness without meaningful changes to the product itself.
Consumers should always read ingredient labels instead of relying solely on front-of-pack claims.
A truly clean label is defined by transparency, not advertising.
